Did You Know?

The original Buffalo wings were invented at The Anchor Bar in Buffalo, New York to satisfy the late-night hunger of the owners son and some friends.

The restaurant opened in 1935 but did not invent the Buffalo wing until 1964.

The Anchor Bar is located at 1047 Main at North St. in Buffalo New York.

What About the Birds?

Take some time to find a place that sells fresh chicken wings that are plump. Many restaurants these days are serving these skinny little wings with very little meat on them. Often they are overcooked and just cannot hold enough sauce. Take some time to find a butcher or a grocery meat department that has good wings.

When buying wings for a group, figure on 1 to 2 lbs per person. Guys eat more than gals. And when beer is involved you can go through lots of wings.

My preference lately is to buy the wings split into the wingette and the drumette. Drumettes are the larger portion that looks like a tiny drumstick. It has only one thicker bone in it. The wingette has two smaller bones. You might even find you like to but the complete wing with the tip and keep it all togehter. I like to do that from time to time but it does take up extra room in the fryer.

Frozen Wings?
You are craving wings but the only ones you have are frozen rock solid in the freezer? I DO NOT recommend defrosting wings in the microwave. I find that doing so turns the blood and blood vessels inside of the wings black. When you go to eat them the inside appearance of the wing meat is very unappetizing.
